I fancied something chocolatey for pudding this evening (I’m on a bit of a chocolate roll at the moment….) Anyway, I had some ripe avocado lurking around, and having made and enjoyed something similar to this a while back, thought I’d give it another go, but this time making a note of the quantities as I go ( I have a terrible habit of throwing ingredients in and the having no idea what afterwards!) For those of you who are thinking – really avocado?? Then don’t be put off honestly. You can’t taste it and it gives the mousse a very creamy texture – a bit like Angel Delight. Delightful
Ingredients (serves 2)
- a very ripe avocado
- 1 cup frozen blueberries
- 1/2 cup coconut milk
- 1 tablespoon raw cacao powder
- 2 tsps raw honey
- 1/4 cup dessicated coconut
- raw cacao nibs to top (optional)
Method
- Blend all ingredients in a blender, pour into serving glass, top with cacao nibs and refrigerate for 30 mins before eating.
- Easy peasy.
